Zabala addressed the crowd under the TEDxBeverlyGrove 2026 banner “Reimagining the Possible,” recounting a morning in October 2021 when his sous-chef quit and the restaurant space he had lined up for Somni’s reopening fell apart on the very same day. Sitting with his coffee that morning, Zabala thought about giving up entirely. Instead, a single phrase surfaced and became the principle that pushed him ahead: not today, hold on for one more day.
His talk covered the years that led to that moment, including Somni’s first opening in Beverly Hills back in 2018, its pandemic-era closure, and nearly four years spent mostly alone in a small test kitchen without a dining room or customers.

Zabala described Somni’s rebirth not as a pursuit of perfection, but as a pursuit of authenticity—a more intimate, more personal restaurant built to reflect his true self. Seven months after Somni reopened in West Hollywood, the Michelin Guide gave it Three Michelin Stars. That honor put Somni among California’s top-rated restaurants and marked one of the most anticipated restaurant revivals in the state.
